Slightly off topic, but in response to the Witch's Hut thing, I once had a Witch's Hut in HOMM3 (random map) teach Necromancy to my Ranger. ... I didn't even think Necromancy was a normal option for Witch's Huts.
Anyway, it is annoying, but I don't think it's that big of a problem. Just send your backup hero to check it out.

I came very close to getting Absolute Rage on Kragh once, it was vs the AI and I had two main heroes, with Haggash being the "more" main one. I had all the right stuff except one perk and the ultimate itself. I only failed to get it because I "won" the "game" (the AI is a walkover even with the improvement pack I have).
Kragh is set up very well to attain Absolute Rage anyway. Just fill out your Attack and Rage with the right perks, then go through Leadership and War Machines, if possible one at a time.
You can even keep Rage low to act as a "buffer" since you'll need all its perks anyway (and get them too), but Attack, War Machines and Leadership's needed perks should take precedence.
Except in getting basic Leadership or War Machines, always choose the right perk over the right skill, so that you don't get flooded with bad choices; try not to have more than 2 skills with 1+ perk slots open after filling up Attack and Rage.
The hardest and most luck-based part is getting basic Leadership + Recruitment and basic War Machines + Catapult. After that, it's pretty easy to force in the advanced perks you want with only Aura of Swiftness there to give you any trouble (to think THAT is ever a bad perk! )
Ideally, you do not want more than one buffer skill opened at any given time, with Rage serving this initially. If you're lucky to get advanced Attack in your first level up, you can easily force the Attack skill's development for the ultimate because the only advanced perk you can get at that point is Stunning Blow (Retribution needs Battle Elation which you will not get until later).
After this, if you can get basic Leadership or basic War Machines jump on it. Together they have an 18% chance to come up. This is less than great, but if you got the above you can bide your time taking until you get the right thing by advancing your Rage. When you have one of them, get its right basic perk in - develop Rage until you get it (with your limited perk options, and Rage being one of two already taken skills on offer). If you are unlucky enough to fully develop Rage without getting the right skill, you have 3 last shots with 66% chances (instead of the previous 33%) to nab it. If the first two fail you can advance the skill you are trying to advance anyway, and at the last you will have to take one of the two offered skills. It is rather unreasonable that you will be denied Recruitment or Catapult that many times.
Apart from the other one between Leadership and War Machines, good stuff to look for are (in this order IMO) Logistics (except in duel maps), Enlightenment, Luck, Defense and the Shatter skill which will shafts your opponent's most dangerous (to you) magic school.
When you get your basic skill and perk, be it either Leadership or War Machines, groom it like you did with Attack. If you're very lucky you can still use Rage as the buffer the first time around, otherwise you need another skill. You need a rage perk to complete each of your other paths, so get that perk before you find yourself wishing you had it already.
Try to avoid basic perks which give more than one advanced perk option. Again, Aura of Swiftness is a real problem; it's good to have a Shatter skill or Shout or Enlightenment (with Bloodfire as the first perk) as a buffer when you are trying to avoid it. This makes it easier to keep only Battle Elation (later Divine Guidance) and Aura of Swiftness available as advanced perks. With War Machines, it's easier. All you need is the Catapult, the rest should be easy to force in if, again, you avoid having unnecessary advanced perks available.
Once you have completed all 4 branches of development, Absolute Rage should become available (as an advanced perk I think), and you don't need the Pendant of Mastery for it.
If all goes in your favor and you never need to use any buffer skills beyond rage you can get your ultimate at level 22, but 28-30 is more reasonable, so you'll need a campaign or a long, long game.
Kilghan, the Goblin King, is also good at getting Absolute Rage because he starts with Leadership-Recruitment. However, apart from being an often less powerful hero than Kragh - except if he gets in a nice Wrath of the Horde with tons of goblins - he will have trouble with Advanced perks twice - with Aura of Swiftness and Retribution, since he will likely finish Leadership before getting Stunning Blow.
Telsek the Imba is another powerful option, perhaps the most powerful, because you start with War Machines and Might over Magic which is needed for Brimstone Rain. You just have to be lucky in getting an early Catapult - there is a 66% chance for it to come up in your first level up. He'll still have problems with Aura of Swiftness, and Retribution too if you don't build Attack before Leadership. But he also empowers your level 3 unit, an already dangerous force, a great deal.
Haggash and Gorshak (and I believe Quorq too) also start only with stuff needed for Absolute Rage but they're more open to unneeded perks, while Shak'Karuket and Urghat (and Gotai and Kujin) start with an unneeded skill each and Garuna has Archery, meaning that short of a Memory Mentor she cannot learn Absolute Rage at all.
Edit: Do not follow this unless you are doing a gimmick build around your Ultimate for its flavor (and the awesome +500 Rage for free). In a skirmish with a human player or a duel, if you see Aura of Swiftness or Retribution, jump on them because they are among the most awesome perks in the game. Stronghold's best Attack build will always be Battle Frenzy - Retribution, with either Tactics or Stunning Blow as an optional 3rd perk, while the best Leadership build is obviously Recruitment - Aura of Swiftness and Battle Elation.
Absolute Rage seems to be the best Ultimate when combining ease to get and usefulness; Call of Urgash falls short because of too many complications with its advanced perks and lack of heroes that start in good positions to nail it (Grok, the strongest option, starts with Teleport so Tele-Assault isn't all that hot on him).

With the patches it is a lot easier to get the ultimate skills then when it first started out. It is still very difficult, and has some very weird skills, but at least it isn't quite as insane. A lot of the times you need a memory mentor and an incredible ammount of gold/patience.

I almost got Arcane Omniscience in HoMM V (original) in Academy campaign.
I needed 2 level ups and the campaign was almost over. On the first level up I got wrong skill, but on the second the game offered me the right skill. If I had gotten another level up it might have offered me Arcane Omniscience. Oh was I mad, I even tried reloading, but it doesn`t work, it offers the same skills.

The map "Underground of Wonder" is perfect for ultimate chasing anyway. You get the Enlightenment set at the start of the game invariably, and there are a lot of neutrals and a memory mentor if you can beat a big # of phoenixes.
You can easy-creep with someone like Telsek using the ballista, then switch to catapult via the Mentor to open the way for Absolute Rage.

I've gotten the Knight's one in a campaign but it wasn't even useful!
