Several options. The first option is to mute all the music and have WinAmp or iTunes or WMP or whatever you use playing in the background while you play. The second and more involved option is to open up the ORC files that contain the offending musical selections, replace the songs with songs off your hard drive you like better, and then repackage them. The third option is a hybrid where you open up the ORC files, grab the musical selections you enjoy, put them into your playlist, and mute the game's music.

The .ORC files are just in your Might & Magic Heroes directory. They are numbered. The one you want is probably Data3.ORC - that is the one with most of the music in it. You take an ORC->ZIP tool like this one here, and then you open it as a regular archive. Take the offending files out, replace them with music you want (that has been renamed to be the same file), and then repackage it back into DATA3.ORC.
I suggest making a backup in case you screw it up somehow or you decide that you want the old music back or Ubisoft's DRM starts flipping out on people who have modded their games.
