Sorry for bumping an old thread, but as there are currently many more pro videos available than it was some years ago, it might be a good idea to have an updated list of interesting/entertaining channels. So, I will just post the ones that have been interesting for me:
StygianOne, plays 8 hero and 1 hero templates well, daily content:

I think this topic could easily use a fresh thread, but since we're at it:
I prefer watching Homm3 content from Twitch, as there's only very few Youtube channels that provide content at daily basis. Note that if you're willing to sacrifice the possibility to interact with the streamer, you can skip all the downtime by simply watching the "old" content there.
Some streamers I do prefer to watch:
Xenofex - the maker of H3Assist, also known for his Youtube guides. Very competitive guy, and prefers to play mirror jebus usually. Very good player, many streams during the week.
Beastro - More casual player, tends to play Jebus cross. Many streams during the week.
I also found it funny that the guy which has basically been always there - Maretti - can still be found streaming sometimes. He doesn't speak in voice, but interacts with chat by typing. Very good content, but you kinda need to know a lot about the Homm3 MP scene if you want to understand his decision making. Mainly does Jebus cross, but plays it usually with a twist, such as random heroes or such.
Ritosux - plays variety of templates with somewhat edgy twist. () One of the top players in the lobby.
Mekick (theknownworld) Only streams during the Saturdays, and plays SoD as well, not just Hota. Probably much more well known from his Youtube channel.

I might not fit on the list since I am only trying to work on guides and provide every detail around them.
I started strong but soon gave up as I couldn't keep the interest of my old subscribers. I tend to come back and create more guides.
I am trying to keep every guide nice, clean, detailed and informative.
My next video will be about how Orb of Vulnerability works against immunes.

Hey man these are excellent guides, very helpful and informative. Good presentation too. I wish there was voiceover but you have good music choices anyway

To add to what was already mentioned, 1-hero tournaments are often organized (see https://www.h3templates.com) and streaming is often required. So at some times there are a lot of games available.
Also, some people do commentary/casting of the games. Besides the mentioned streamers, I find commentary by AlkinBones (https://www.twitch.tv/alkinbones) very enjoyable.

Really, thanks a lot. Unfortunately, I am not much into commentating and I think it would only lower the quality of the video.

I've noticed that RitoSux, a good player that was mentioned in this thread, has started to upload some of his gaming sessions to youtube:
