Brewing Beer

I got a brew kit and a couple of carboys recently. I've read quite a bit about brewing beer.

Anyone else here brew? I was hoping to get some advice on attempting my own recipes.

The only thing I can suggest is start off easy with the hops, if you put it in too thickly you'll get tired of your beer very quickly.

I've really only brewed a few times. There's a local brewer that lets you use their facilities to make a custom batch.  Unfortunately the batch size is about 14 gallons - I've still got a few cases from last June that I'm still working on

Something I'd like to try next time is a beer that features orange rind and cloves.  Either that or some type of rye based beer.

Do you have any advice on bottling style? The bottling part seems like a huge pain in the ass.

22 oz bottles are easier than 12 oz bottles and it's better for a home supply too. Just crack a bottle and keep it in the fridge for whenever you're thirsty.

As far as bottling goes I think the only way you can make it not be a pain in the ass is to get one of those $150+ countertop bottlecap presses.  How much do you like beer?

Someone was telling me that using plastic 1 liter soda bottles was a great way to bottle the beer.

You ever try that?
