Opponents?
Is it possible to play with a singleplayer victory condition? (like defeating a group of monsters with no opponents on the map).

Yes it is, you can edit it from the editor choosing "Special victory condition"

There are even some maps already on the game like that - I just played one the other day where you had to kill a group of devils. I put it on Impossible difficulty since there was no threat of being eliminated and got an Archangel in the highscores.

I have another question and I guess it fits in here. I remember reading somewhere that in difficulty settings after middle level (the rock)the AI does not change behavior and the only difference is you start with less resources, however since then, I've seen many people talking about AI behaving like this or that only if the difficulty is set to maximum. Which one is true, or is it a difference between SOD and WOG/Ere 2?

Download map
It is simple: test your self and see. Start this map 10 times as red, no wogify and try 130 then 200. You will see how the AI acts on first day between rock and 200%
Read here.
WoG does not change AI behavior but battles are much harder if you play with experience enabled/enhanced monsters as AI will use dispel very often, which almost never does in SoD.
