Are the towns refered to with their more "formal" names in-game?
From time to time I hear the towns being named Haven instead of Life or Asylum instead of Chaos.
But I only recall them being named after the elements/philosophies they follow rather than the actual castle type.
Someone explain that to me, please?

People tend to use HV/HVI terminology for towns that were clearly their predecessors. Lazy, but it sometimes saves time. (For example Haven for Knight, Castle, and Life, Sylvan for Sorceress, Rampart and Nature, etc)

Actually Haven and Asylum are names for the towns (castles) type, Life and Chaos are something like nicknames of the factions. So in the particular example you have faction "Life" and town type "Haven". And the others:
Order - Academy
Nature - Preserve
Chaos - Asylum
Might - Stronghold
Death - Necropolis
