Actually, it's rather the other way around, dwarves are known mostly for their magical artefacts, whereas IRL the arabs were often brilliant engineers, taking the already-complex mechanism developed by antiquity Greece to an extreme. Take a look at the works of al-Jazari.

I can't make up my mind whether I would rather have Fortress with Norse theme or Fortress with mechanical theme, so here are two options ...
FORTRESS #1: NORSE
Core:
Shieldguard: As in H5. Worked well.
Axe Thrower: One or two ranged attacks, then melee, no melee penalty.
Berzerker: Something like the H5 version, but more sturdy.
Elite:
Runepriest: Like H5. Worked well.
Armored Bear: Like H5 bear-riders, minus the rider.
Valkyrie: Flyer, fast offense but fragile.
Champion
Ice Giant: Fast walker, powerfull melee, reminiscent of H5 Thane
Fire Dragon: Like H5. Worked well.
FORTRESS #2: MECHANICAL
Core:
Shieldguard: As in H5. Worked well.
Pyrognome: Armed with flamethrower (semi-ranged attack). Can repair mechanical units.
Berzerker: Something like the H5 version, but more sturdy.
Elite:
Engineer: Ranged and support, can boost mechanical units in various ways.
Scorpio-tronic: A mechanical scorpion, complete with stinger. -
Baloon: Hovering mechanical unit. Slow with limited range "drop" attack without retaliation.
Champion
Steam Tank / Dragon Golem: Fast mechanical walker, powerful melee.
Fire Dragon: Like H5. Worked well.
Ok I think I would go with the Norse theme, as it does seem more rounded somehow. Honorable mention to War-overlord's Magma Toad ... one of the best concepts ever. But combining it with Magma Dragon will probably be overkill.

2. Frost Troll - Ice Troll (Shooters - remember the Trolls from H2, which hurled stones - the Ice Trolls can use their ice breath to create ice boulders to hurl them. Don't know how this stacks with the Fire god theme but I like the idea of trolls in a dwarven faction. Ice trolls could be enslaved by the dwarves fire magic and they are used as warriors)
3. Rune Knight - Rune Lord (spellcaster/melee warrior)
Champions
1. Rock Giant (Volcanic Rock as in lava) - Fire Giant
2. Salamander - Ancient Salamander (Avatar of Arkath/Fire God) - a giant two legged worm, weilding a halberd in its hands and using fire breath for a secondary attack when a near-by enemy stack is attacked by another friendly unit)

People so against Dwarves in the Dwarven faction... Thats how Dwarves roll, they dont hide behind others, they fight their own battles. It makes Lore sense, both for Haven and Fortress, these are Empires, not 'zoos' or 'nomads'. Its the same reason Academy has only a single wizard in the line-up. Some factions being themed as real armies makes a great parallel to the mixed-bags that Stronghold or Dungeon present. You get a clash of themes that is interesting.
As for my lineup
Core~
Dwarven Axethrower (quick moving mid-range archer, no melee penalty)
Dwarven Engineer (short range blunderbuss, can erect walls to build battlefield cover, Cover is demonstrated in gameplay video)
Dwarven Shieldguard (i liked their dynamic, charging into them does almost nothing)
Elite~
Bear Rider (seriously anybody who dislikes bear cavalry has no soul)
Rune Priest (could possibly destroy enemy cover, they can bore through stone so could 'sink' cover into the ground)
Battlesmith (Heavily armored, wielding hammer an axe, special Runic abilities)
Champion~
Valkyrie (fire spirit, boosted by death of dwarves, covered in faction lore)
Basilisk Artillery (A large tamed Basilisk mounted with a Cannon. These are Earth creatures who often dwell underground, perfect candidate. Very large, turns targets to stone to make them easier to blast apart with cannon)
Warfare~
Standard Battlefield heal tent
Replace Basllista with Cannon, better.
Replace Ammo Cart with mobile Blacksmith, offers physical defense/attack buffs.
Adding a little bit of techology into there would mix them up as a faction, the elven lore states they "do not like machines" but really there arnt many MACHINES, even Academy just uses magic to move puppets. This might be hinting at machines in the game now. Since they are masters of fire magic, shooting projectiles via explosion would be easy for them and fit their supposed role as experts of Siege.

Fortress: A norse and mechanical faction
Same Town Structure as in Heroes v, but not so deep.
Fortress Theme: Flame & Steel.
UNIQUE BUILDINGS
Production Guild
Get 1 extra resource/1000 gold from each mine you own in town’s Area of Control at the end of the week.
Or
Runic Shrine
Fills the Rune faction ability gauge to rank 1 at the start of each combat
Treasury
Get 10% gold income of what you have in gold at the end of the week
Or
Hall of Valor
When friendly creatures fight in the town’s Area of Control, their defense is increased by 10 and their Magic Defense is increased by 10%.
Grail Building:
Blazing Anvil
Gives +5000 Gold each day and 50% creature growth for that town.

Definitely though I would rather replace one of the two animals in the lineup. I'd actually like to see a troll in the lineup, provided it is done well.

Dwarf armed with a rifle. slow but heavily armoured. ouclasses most core ranged units in damage and survivability. Extremely vulnerable to melee, taking extra damage from melee sources and retaliates at 1/4th of damage.
Shield guard/Shield maiden
slow, heavily armoured dwarves with giant shields. ignores a portion of the attack of attacking enemies. does very little damage but can take a beating.
Drake/Lindorm
Quadraped serpentine dragon-like creatures. large creature, good health and attack, average speed and defense. upgrade breathes fire.
ELITE
Great wolf/Fenris
Big ass wolves. large creatures. good health, attack and speed. great damage but poor defense. upgrade deals more damage to small and damaged foes.
Troll/Troll Lord
It's a classical troll. phenomenal health, good damage, average defense and poor speed and attack. upgrade gets more defense above ground and higher speed underground due to skin getting harder in sunlight.
steam gun/steam cannon
big gun that shoots steam. area attack in an arc. great at close range. cannot move once deployed (deploying skips a turn. comes deployed) phenomenal damage and attack. good defense and health. atrocious speed.
CHAMPION
Valkyrie/Grand Valkyrie
Large women with burning wings and spear. very good speed, attack and damage. average defense and poor health. does more damage to higher tiers. immune to fire. upgrade gains no enemy retaliation and burning aura, damaging all adjacent enemies.
Giant/Jotunn (ice giant)
Large, heavily armoured humanoids wielding great hammers. fantastic damage, health and armour. poor attack and speed. pushes enemies out of the way when moving, damaging them. upgrade is immune to cold damage and takes reduced fire damage and also has a chance to freeze enemies on attack, giving them more defense but forcing them to skip a number of turns.
