I am all for if someone you are friends with identifies themselves as some other gender and you decide to respect that by addressing them as such, but if it's not someone you know I would imagine people would address those they see as how they see them.
Also I don't think hir or ze are pronouns? Normally the language develops based on how those who use it, if only a minority even knows about hir or ze they are likely not accepted yet.

It doesn't have grammatical gender like, say, French does but it still has the distinctive pronouns he and she. So you can say:
- I was driving down the road and this dog started chasing us. He ran along the car until he got out of breath.
or
- I couldn't sleep at all last night. There was this stray cat up on the roof and she made these wild noises all night long.

When I refer to animals I usually use "it", so I do not see the point in the question.

Cats are independent and non-conformists. These are, if anything, typical male characteristics.
My cat is definitely a "he". He told me so. End of story.

Noobx has never had a problem being called he, jk.
I will call you whatever you want if you are my friend. If you are a stranger I will refer to you based on how you appear, that is the best I can do. Perhaps, someone can show me pictures of an average ze?

I use "they" (ze/hir don't flow as well i find personally) if gender is not discernible and i am not aware about preferred pronoun. Otherwise I'll always do my best to refer to someone they way they want too. Anything else is disrespectful at best.

The question is whether the cat is in the box or not. If it's in, you can't tell the gender .
