Order - Halflings (Precision + Nobility = A swarm of early game ownage!)
Chaos - Nightmares (Terror. Freaking. Owns.)
Nature - Griffins (Unlimited retaliation is awesome, also they can tie up enemy shooters and last a fair amount of time with high HP.)
Life - Uh... Ballistae I guess. But I HATE the Haven town.
Death - Bone Dragons and Skeltons, shooters are my best friends and my worst enemies.
Might - Cyclopes (Area of Effect attack and freaking high damage owns. Plus, if you can get a mage somehow, precision...)
Neutral - Gargantuans (Imagine a Titan, a Cyclopes and an Elf all squished into one... )
EDIT: One star, woop!

Genies
Genies are my favorite.
Now, I don't believe they are the most powerful. After all, they are only level 3. Nor do I believe they are the most powerful level-3 creature. Cyclopes, vampires, monks...they are all arguably more powerful. But genies are more interesting. They are the most fun to play.
In fact they are a reason I have preferred Heroes IV over Heroes III. With Heroes IV, the player can control what spells his genies cast. And their spells are indeed good: Song of Peace, Illusion, Slow, Mirth, Ice Bolt. It's true, my genies almost never use their sixth spell, Cowardice, but any of those other spells can be critical. Sometimes it is also critical that my genies are split: maybe as many as five single genies, with the remainder in one big stack, packing a punch with Ice Bolt.
Genies are relatively inexpensive to recruit, and they move relatively fast across the adventure map.
As you might conclude, my favorite race is Order. Admittedly though, I don't play pure Order. I do always use a wizard, but I also try to include a tactician from Life. The tactician gives my genies the chance to move first, which is important.

Life : Angel (resurrection)
preserve : phoenix (best fighter in the game. ultra fast, attacks 2 stacks at once, resurrects itself )
academy : dragon golem (almost always strikes first)
death : devil (summons demons)
chaos : hydra (attack all around)
might : ogre mage? (casts first strike)

Life : Champion (I like how this unit looks)
preserve : Wasport (defensively, this thing is beast...err, I mean plant!)
academy : Titan (my favorite unit throughout HOMM. I like its design in this game, though not as strong as it used to be)
death : Vampire (awkward design, but you can't not like how this guy performs on the battlefield)
chaos : Nightmare (great terror spell)
might : Cyclopses (brutally overpowered by the designers)
Neutral : Evil-eyes (like the wasport, this thing is great)

Life: Champion. 1 on 1 they aren't so great, but that's the point of really high growth.
Preserve: I like mantis more as a unit, but you don't get a lot of them, so I use phoenix more.
Academy: Genie. Get a whole bunch and ice bolt stuff. Kills huge numbers of units
Death: I like bone dragons as a unit, but with grandmaster necro a big stack of vamps is impossible to kill
Chaos: Hydra. Cast cat's reflexes, first strike, bloodlust, haste and other spells and watch everybody die.
Might: Cyclopses. with the area attack they are the best ranged unit ever, in my opinion

I'm more thinking about the way I slaughtered 26 sea monsters with 4 hydras at no causulties...
Any good spellcaster can really screw up your plans. Whenever I enter a fight, the first target of the medusas is any enemy casters, and the first goal of myself is to keep my casters alive.
Then again, playing versus an actual live player in any fight would change things a lot.
I just think cat's reflexes and mass first strike are too good of enchantments to make your tier 4 unit immune to them.

sea monsters are evil unless the ai is dumb.
Observe the following combat:
Hydras wait. Cat's reflexs cast on hydra by my sorcerer. Snake strike cast on hydra by my thief. Sea monsters move. 3 arranged themselves so the hydra can hit all at once. Medusas hit odd group out. Hydras move, attacking three groups twice.
Next turn: Hydras attack three groups twice more. Sorceror casts implosion on the 1 group that's not nearly dead. It dies. Thief casts giant's strength on hydras. Sea monster tries to attack hydra. Snake strike activates and hydras attack. All sea monster die.
This combat was a while back, so I might have missed the precise order in which units moved, but that was the general outline.
If you could do that with blackies, then they would be my favorite. But you can't, so I like hydras better.

Life: Angels.
Order: Titans.
Death: Bone Dragons.
Nature: Don't know. Elves maybe.
Chaos: Black Dragons. Although I wish there were Green & Red dragons too. Hydras can also be fun to use sometimes.
Might: Don't really have a favorite here. I'll go with Trolls because they are fun to have.

most likely, a few black dragons would get eaten. unless you use mind spells. I also prefer hydras. they have quite bad stats for level 4 (HPs are good, but defense is very weak) but very good abilities, especially when playing against the AI.
in another hand, black dragons are among the hardest opponents if I remember well. they are fast and you can't cast any spell on them.
2 sea monsters are much stronger than a black dragon but much easier to defeat too.
