New Star Trek
Is it worth watching? I've seen the new movies and the first season of Discovery, but I found them... lacking.

It's... a lot more spectacle, and a lot less substance. A lot more putting faith in things turning out well, a lot less creativity and resourcefulness being used to overcome problems. If you're looking for another episodic sci-fi thriller like Next Generation, it's not here. There's a long-running plot that impacts every storyline. If you're looking for a deep story, cutting commentary and well developed characters like in DS9... you'll get lip service to all three.
It's not great. It's pretty dumb. But it's something to watch and you could do worse, I guess.

stick to a good Sci-Fi show, like Babylon 5. speaking of, it's rumored reboot will suck just as much as every other western show these days.

I've actually seen most of these, and my original assessment is pretty much true of Discovery and Piccard.
Short Treks are, admittedly, much less in that "Shallow, style over substance and overreliance on action" camp, mostly because they're just... a bunch of shorts. Mostly disconnected, working as setting background or expansion on parts from Discovery and Picard, sometimes as cartoons.
The Lower Decks is probably the most worth it if you are into star trek, since it's an episodic series that's pretty much meta jokes about the various series and sci-fi tropes in general, doesn't take itself seriously AT ALL, and has callbacks and cameos galore. It's also a cartoon, so they're able to get away with some things that would just be janky with a real life cast.
Prodigy and Strange New Worlds I haven't seen at all... and I don't really have any desire to. Prodigy is very much a children's show, while Strange New Worlds is a continuation of Discovery in tone and story line, making it a bit of a revisionist series for the Original Series. I don't hold the OS as sacred by any means, but... it's still not interesting for me.
