HOMM1: ?
HOMM2: Phoenix
HOMM3: Minotaur King or Manticore
HOMM4: They are all ugly but Nightmares are best.

HOMM I - I most clearly remember the wolf - very good
HOMM II - must be the paladin/crusader. I also liked the dragon looks in that game. The game was consistent in the art department.
HOMM III - dread knight, minotaur king, grand elf, centaur captain, power lich, wolf raider, thunderbird, lizard warrior, master genie, efreet sultan, firebird/phoenix. All very nicely drawn. The game consistent in the art department.
HOMM IV - centaur, angel, gold golem, titan. Some really good ones, but we have grown to expect more consistency...
