I haven't played heroes 1 or 2 or WoG.
I think 3,4 and 5 all have their good sides.
3 is the first one I played and was the one which made me love heroes. I think it's the most simple one, and it's just good, with nothing annoying and stuff.
I didn't like 4 at all at first, but then gradually started to like it. The thing with heroes and monsters being independant was a great system which I really loved, and I did have alot of fun times with 4 too.
A great thing with heroes 5 is the initiative system, I really love it. It was a bit stupid in heroes 3 when the hero with the fastest monster got to cast a spell first, and also it's great that movement speed and order of action are separated.
Heroes 5 also has alot of good conveniencies, that you don't think about, but make the game so much more enjoyable. Like caravans (existed in 4 too), growth in dwellings stack, atb bar, indicator showing how many creatures will die when you attack something, etc. All good. Don't really like the 3d maps though.
I think they're all good in different ways, each has their own charm.

WoG had the greatest potential from all, because it can adapt to any situation. Unfortunately it was kinda abandoned by the team, and requires being very comfortable with a difficult scripting language. It is versatile, it suits any wishes but has an awful multiplayer. If used well, it can be a perfect chameleon with all the other HoMM games features, even HoMMV. And without the flaws.

Voted for Heroes II because it was my first Heroes experience. The game is still fun comparing it to latest installations.
As for other:
Heroes I - was a testbed were developers were trying to formulate original features of their turn-based strategy.
Heroes II - had a solid original gameplay that can be called classic.
Heroes III - developed and expended many features included in Heroes II. I tend to view it as boosted and balanced version of Heroes II - you receive more town types, more hero types, more units, more unit upgrades, more skills and etc.
Heroes IV - was an attempt of major overhaul to the title. Ideas from Heroes II received another iteration and were mixed with many new features. The game has distinct flavour and style though it looks very different to previous Heroes III.
Heroes V - in some way it is a summary on whole Heroes title.

Heroes of Might and Magic III, that's for sure. A real classic.
Everything in this game is perfect: the music, the towns, the creatures, the spells, the artifacts, the campaigns... EVERYTHING!

Well, I gotta say that the best music is in H3. Such furious violins
worst music is H5. The music doesn't change as often. More locations have the same music.
Also, the feel of H3 was great. It really felt like you were playing inside a magical story book. I do not get the same effect in H5 at all

I took Heroes 5 cause the creatures are more real. Like the collossus, Its is meant to be HUGE, And they arent in the others, In heroes 3 its way to small, Theres many human like monsters at the same Size. So, Heroes 5 was my decision, And i want no bad commentaries

no he's not stupid at all (us swedes may rule the internet, but we don't own it)
I love heroes III, but only with expansions.
Heroes IV has the most pleasant kingdom/map view. Plus, the heroes could really be fun to play as individual and leaders of armies.
V have a lot of good features, but the camera angles messing up all the time and so many unnecessary graphic stuff... The underground is just impossible to navigate through, why did they make so many obstacles to restrict our view? Why not do like in IV and at least show and outline through the obstacle of stuff, creatures and heroes? And while heroes specialties are fun, there should be a lot more heroes to choose from...
So overall, Heroes III comes out on top!

I'm between h3 and h5...
h5's style - hero casting and 'figthing' (but not as a creature like h4) is the best, and the champaings are very good!
but h3 had very good factions - beter than h5 and its arabian wizards, and half demon orcs! -, good champaings too, and was the fist HoMM i played...

Heroes 5 is quite easily my favorite, but only as of TotE. Before the game was kinda meh, and there are still some flaws.
But I prefer the skill system over that of 3, especially the way every faction has their own unique twist (rather than only Necros getting their own racial).
And as for visuals and music, tastes differ. Unlike 3 I can actually stand pretty much every factions looks (except for Demons and Dark Elves) and the music is to my liking aswell for the most part.

HoMM3 - all else is false
HoMM4 was so beta, HoMM5 too, but at least that changed somewhat. Still both games after the best TBS have awful map layout and offer much limited and dull gameplay. 4 and 5 are limited by their outlines, but sadly have a lot of nice ideas that would've made them great games if it wasn't for the design that ruins them.

I have to say that I first played heroes 3 and was not able to enjoy heroes 1 and 2, so I was all excited about homm 3. After heroes 4 showed up I didn't enjoy it at first, but then little before heroes 5 started to show up I tried 4 again and found it magnificent. Later I played 5 and liked it too. Now in order to choose the best of the series I have to put their good and bad sides:
Heroes 3:
+Wide variety of races!
+Distinction of casters and fighters
+Balanced castles(except that +2 pheonix growth on conflux)
+Good creature relationships
+Nice upgrade structure
-Hero spellcasting
-Hero specials are imbalanced
-Low amount of creature spells and abilities
-Creatures are too dependent on heroes, as well as the opposite
Heroes 4:
+Independent racial strategy
+More abilities
+Every creature has some ability
+More in-depth battles
+Heroes can become superman
+Different spells for each race
+Map walkers
-Heroes can become superman
-No upgrades
-Bad morale and luck definitions
-Don't like how it is determined who goes first
Heroes 5:
+Very good 2upgrade system
+Good racial definition
+Unique abilities
+Has a wide variety of tactics
+You can place your troops on the battlefield(not by default)
+ATB scale
-Graphics ruin the pleasure sometimes
-I don't like how heroes storm the battlefield and then go out in the corner
-Towns need improvement
-Talents need rethinking and improvement
I can't say the best one of them, I hope upcoming versions have number of towns similar to HOMM3, more active heroes like in HOMM4, more distinct towns like in HOMM5, I also liked the ATB scale and luck/morale on HOMM5, but I can say that battles were the best on HOMM3&4. So for the best of the series I say Heroes 6!

-Towns need improvement
Care to elaborate on that? The only issue I can think of is that Academy Artifact Merchant is much more expensive than Dungeon Trade Guild while providing the same service (ignoring Trade Guilds weekly bonus since Academy gets that with another building).
And the grossly expensive Dragon Graveyard for Necropolis, of course.
