actually
the main times you can effect these is when visiting the arena and the choice buildings for raising stat's for $1000
with this in mind, I generally go for more attack (Unless I see Titan Gladius in my area and knowing it will be plenty for attack and lower defense I could take defense) or if i have a hero with armour specialty then I may go for higher defense.
For the knowledge/ power choice, unless my knowledge is extremly low, I usually always choose power

I almost always choose offense when it's a choice, because of the ones you hit that only give defense.
And after a certain point, I take power over knowledge.

usually I choose attack over defense and power over knowledge, but there's a lot of situations that could cause me to make a different choice.

Knowledge
Well, it depends on the hero I am building, but for a main battle hero I would usually try to take Knowledge first, then Attack&Defense, and power last. Power is only good if you have a great offensive spell and no recanters present. It's also good for resurrecting higher numbers of creatures or reanimating, but aside from that, all the best spells rest more on amount of mana rather than power. Since it's more likely you will get non-offensive type spells in the majority, I play the odds. Yet, frequently you can either get a nice hero in tavern and make a scholar or get your 4th level guild in at least one town if you are playing a large map and decide what primary skills to enhance.
To my mind the real choice here is about artifacts, since I almost always have so many artifacts I can't fit all of them onto the slots available, so I have to choose which ones complement the hero and army I have.
Also- in scouts Knowledge is usually more important for almost all magic heroes likely to have the requiste 2 power which kills the solitary level ones populating scouts army groups and having the mana to fight through more than 1 battle can be invaluable.

Being a dungeon player and therefore the handy presence of the Mana Vortex in most games means that knowledge is second to power. I always try and build my attack and defence scores evenly, but I find it good to have a higher defence rather than an attack. There are a lot of common artifacts like gnolls flail that appear on a lot of maps which can boost my attack stats nicely.
If I can, I will usually like to create a hero with Defence 4-5 points higher than Attack and my Power skill usually double that of my Knowledge. That's a comfortable spread of primary skills for me.

map dependent alot
Yes, I only say knowledge first as in reference to playing the odds- oftentimes if I get Dungeon or the skill(which I have forgotten the damn name of presently) which doubles mana, or even there is a waterhole present on the map, or I get a really good +KNowledge artifact... etc; it can change the whole way I would focus my hero development, just staying flexible, but also having a plan which only changes if it needs to change is the best way to win.

If I come to a point where I pick +2 to defence or attack, I would pick whichever even's it out.
(In campain, I mite subtract artifact's value's)
Same goes with power/knowledge.
I would pick AT/SP over DF/KL if it were even, or close to.
All in all, I like 'em high & mighty.

It all depends on the hero and on the class
If I have Wizard, I will take Spell power. If I have a barbarian, I will go for defense. I like keeping my heroes with equal attack/ defense and more power than knowledge. The latter is because I do my best to pick up Intelligence and it helps me with the SP. I think the warlocks are the true mighty magic warriors because they advance on power.
Of course, there are artifacts that can boost your statistics and as Zud pointed out, if there's such an artifact nearby (or you already have it), it's a good idea to take the skill you lack. For me attack is more important than defense because when you strike furst, you inflict more damage and the retailiation makes up for the lack of defense.

I disagree a little Ichon in one regard, one of my favourite combos is lightning bolt and recanters. Get a high power, u dont need many spell points with expert air, and no biiiig spells, and bolt the hell out of your enemy.

if you're a warrior, attack.

Of course
if the hero has plenthy of spell power and really little knowledge, it's good to take knowledge too. For example in the campaigns I have Jenova with 10 power and 1 knowedge. Thank you; she would cast one strong lightning bolt and that's it. I would take 1 more knowledge than 1 more power.
But of course, not many cases are _that_ extreme.
