The Minotaur has the highest damage output of all level 5 creatures, and you keep it on defence?
Also, by the same train of thought, do you keep Crusaders on defence? (speed 6)

that's what I'm doing with crusaders.
But before going into more details: I'm playing SP, large maps and the maximum number of AI's. A MP game 1 vs 1 on a small map will be much different
For me, crusaders, Medusa, Marksmen, minos are midgame units. I'm not considering battles where you just overrun your opponent without losses.
Attacking an AI hero of equal strength with an army of 2 shooters, some fast flying unit and some strong but slow ground unit, I don't go to the other site. I could rush in with the flyer, but will have too many losses. Instead I wait with my units and let them come to my side, provided I will win the ranged duel. If I have expert earth already I will cast slow. They will send in their fast units to block my shooters. Crusaders/Minos make short work of them. Running with the minos will mean you don't have them where you need them most.
There are cases where you just run forward with everyone and kill the enemy before he gets to move. I don't think there is a point in discussing strategies for these "battles", although they are probably 90% of the fights.

Multiplayer games are played on L or XL, never on S.
If u play singleplayer maps vs 8 comp players on 200%, strategy changes a bit, especially refering to money buildings, but still u try to explore as fast as possible. And the early fights for money and resources are even more important.

Not sure what time in the game u have in mind when u talk about "midgame". In multiplayer games (130% in general), L or XL, midgame means week 2 and week 3 (except it is a very rich template like jebus). Week 4 is endgame.

You talk about a fight vs a computer hero. But the things u do first before u meet an AI player is cleaning the map. This happens in the first week, coz u need all the gold and resource and arties they guard. As already stated above, if u attack a bunch of shooters first week, u will have some losses if u go into the battle with shooters and walkers. If u go into the battle with 3 rocs, u normaly win those fights without any loss at all. And every surviving unit is important on those difficulties.

Here your show the different way of idea u have refering to gameplay. In multiplayer, u never have an "overwhelming" army where u overrun your enemies. You are always the underdog and try to win fights with very small army vs hugh comp army using the sillyness of the AI.
There are many examples of those fighst posted here in the library. Be it all these "full crypt day 1" fights, "hydra in dwarven treasury", "small conservatory with Dungeon day 1" and more and more. Try to find these threads and when u saw those walkthroughs, try to play them yourself. You will see how your gameplay will change. Just ask yourself or try to remind at what time u do those fights normaly when u play singleplayer. And then compare it with the times multiplayers do it. You will love this new experience..

I'm sure MP plays much different. However, for me H3 is a SP game. When I want to play MP I play other games. When I want to be alone, I come back to H3
Since I play large maps that are low on ressources I always go for Capitol day 8. So first week I fight with level 1 and 2 monsters. If I lose all of them (except 1 ) it is ok as long as I get the important mines.
"Midgame" for me starts around week 3.
However, if you go for shooters at all, you do it right. Then you also learn archery and invest alot of money there. If you have the stronger ranged units they will be attacked. You have to guard them.
In many games I ignore shooters completely - then it plays different.
but all this is far away from the topic. Let's say rocs and minotaurs both are good
btw: The _really_ cool minos were in H1
