A patrician choice indeed, I'm also a guy that goes for the underdog nations, my funniest game was with a Templar custom nation in North America.
On the topic of historical games, what do I hate the most in the development of these games.
1. Simplification of a nation's government
2. Abstraction of actions in a too gamey way
3. Wrong representation of diplomacy or international relations
4. Too little focus on the actual military side
5. Too little focus on the microeconomics scale

3 Diplomacy - sucks ass, no matter what game you play, who you play it sucks ass to the point where you're not competing with the intelligent or egomaniacs each with their own interests and things you may collaborate/cooperate on or clash on. You're up against a bunch of twitchy schizophrenics.
1. this might be my second guess
2. dumbing down of mechanics to make it more accessible has been an issue in some games, but most remain pretty faithful to their vision.
4. Most games have decent to acceptable combat, nothing I've seen would get my knickers in a twist.
5. Lol Microeconomics, you mean besides just watching dough flow into your coffers from the exploited masses? Some games even have protection rackets about as much you need if you're Sicilian.

Welp, that was a fast one.
I wasn't referring to just diplomacy, tho that would also be one of my pet peeves as well, like, to make an EUIV example, Austria hates the Ottomans to their guts, I'm the Romans with Hungary as an ally, so you know, maybe coalize against a future threat? NAAAAH let them take Constantinople. It's already ahistorical to have the possibility to have allies at that point, so why not at least have it make sense? Or worse still, the Venetians, who historically sent a force (that didn't arrive in time) or the Genoans, who were at the walls of Constantinople should help you, but naaaah, have an historical rival modifier so that they will crush before the Ottos do.
Even worse in Civ games or other strategy games, where I see no point in having diplomacy with the AI, since it's either extortion or reclutant treaties, I mean, I'm a much stronger empire, so why should I agree on emptying half of my coffers for just a single trade good?
Hence why my Civ games usually turn to genocides.
But the other thing about that is that most of the times they are modelled in a simplistic way or even gloss over some important details.
Like, to return to EUIV, since it's my favourite of the genre, why is Sicily bloody annexed to Aragon? If you're playing the personal union side with Naples the same has to be done to Sicily you twat, there is a locution unique to Sicily which is: Rex Hispaniarum et Siciliae, where does it say that Sicily is a part of Spain?
But that isn't limited to my home, for example, when the personal union between Poland and Lithuania is formed... Poland is the senior party, despite it being formed by the Grand Duke of Lithuania over Poland, so technically it should be the opposite for some time, until the process of Polonization strikes the Commonwealth.
And even then, there's a difference in the Spanish separation of crowns and Poland-Lithuania, since the former retained high autonomy, had independent parliaments for each crown, and independent codexes of law (which by the way is the reason the jews got expelled later from Sicily, since such a thing was actually outlawed by our own codexes), while Poland-Lithuania was arguably more integrated.
And then the Habsburgs gain the Netherlands and Hungary, but never gain Spain because modelling the splitting of crowns is apparently too difficult.
Personal Unions are such a complex subject that I got a bit angry at that after learning more.
