Do you leave AI players ON in MP maches?
You turn AI players ON or you just block their slots on bigger maps?
The reason I am asking that is because last night my oponent was eaten by two AI players. He managed to kill the first AI player but the second finished him. So it's like I was the winner but haven't even seen the oponents hero.
The bad thing about switching AI off is that bigger maps (more then 2 players) get empty and unbalanced. So either play Peninsula or just face the factor of luck?

Well I turn the AI off.... and play the user made maps....
then "AI" does'nt matter

Agreed. There are several good 1 on 1 user made maps, so no need to worry about it.

I have heard/read that if you have an AI in a network game, and the computer player gets eliminated, one of the computers can lock up waiting for the (eliminated) AI to finish its turn.
This has been enough to leave the AIs out for us.

On Hard or Heroic I won't allow computer players, because it's too easy for them to skew the game horribly.
Normal computers are suitably incompetent such that they won't wipe someone out arbitrarily, and they still make it a little more challenging to grab towns that would otherwise be neutral.
