Here's my list of favourites:

Level 1 - Pikemen (strong and reliable)
Level 2 - Dwarven Warriors (tough little guys...)
Level 3 - Beholders/Evil Eyes (very useful)
Level 4 - Griffins/Royal Griffins (fast and furious)
Level 5 - Mighty Gorgons (THE GAZE...!!)
Level 6 - Dread Knights (should've been level 7 necro unit)
Level 7 - Archangels (there's no match for these creatures)

Level 1: Centaur Captains (spped is unmatched compared to other level 1 creatures).
Level 2: Harpy Hags (Can fly back from danger).
Level 3: Cerberi (can attack all round).
Level 4: Vampire Lords (can steal health from foes and resurrects fallen vampire lords from the horde).
Level 5: Power Liches (can cast death ripple, shoots and it's magic affects all nearby foes).
Level 6: Dread Knights (does a lot of damage).
Level 7: Chaos Hydra (crushes everyone nearby).

7) AAs
* the best 2 low level shooters for an extremely fast start and overall ranged superiority later on in the game.
* the best 3 walkers to kill anything that dares to get close to those shooters.
* VLs + AAs = no explanation needed

Level 1- Pikemen strong good health
Level 2- Archers Shoot Twice
Level 3- Grand Elves Shoot twice good unit
level 4- Arch Magic Good unit have good stats
Level 5- Thunderbirds they are powerful
Level 6- Naga/Naga Queens Best lev6 unit in the game, can   be a lev7 unit if they wanted to be.
Level 7- Titan Best Ranged attacker in game fav unit

1.lvl ixies (no retal and fastest)
2.lvl :air elemental (best dmg)
3.lvl :water elemental (much hp and nice dmg)
4.lvl :vampire lord (never dies)
5.lvl :Mighty Gorgon (angel killer)
6.lvl hysic elemental (no need to say anything)
7.lvl :Behemoth (good hp and dmg)

2: marxmen ( 2 for 1)
3: dragon flies (sultans beware)
4: ogre magi (hp like a roc, great power, just need mass haste)
5: thunderbird (smack him with a thunder!)
6: wyverns (day 1)
7: behemoths (Black Dragons rule, especially with 5 defence)

my set of creatures if actually rather interesting, and i'm sure people will disagree with me on some accounts, but here goes:
Lv 1 - Sprites (speed of 9, no enemy retal = hit and run at early stages     of game)
Lv 2 - Wolf Raiders (never underestimate these critters... if the enemy's retaliation has already been absorbed by another creature, and the wolf raider hits, you will see the power!)
Lv 3 - Iron Golem (really good tank unit, really good unit to block a hole in your castle wall as well )
Lv 4 - Vampire lord (early game you have 15 of these and your're invincible, late game you have 80 of these and you're invincible, well nearly...not if you meet another nec or flux...)
Lv 5 - Mighty Gorgon (Death stare really owns the whole lot of them )
Lv 6 - Naga Queen (Frenzy and attack with no retail...)
Lv 7 - Ancient Behemoth (The ignore 80% of enemy def works really well, ABs have high health as well)

1.skeleton(i cant get enought of them)
2.dwarfs,good resistence against magic
3.golems,have strong armor and resistences.
4.archmages of course.
5.liches,with there poisoning clouad,and magiacl abilitys of decay in h5.
6.i wish i could replace pit finds and helsteed and nightmere.
7.titens.enought said.

1 level: Sprite or Centaur Captain;
2 level: Storm Elemental or Harpy Hag;
3 level: Grand Elf or Royal Griffin;
4 level: Vampire Lord or Arch Mage;
5 level: Mighty Gorgon or Thunderbird;
6 level: Naga Queen or Dread Knight;
7 level: Black Dragon

I think that the creatures above are the most effective.

Favorite creatures from h3:
Level 1:Centaur\Centaur captain
Reason-very good speed for level 1,good damage,and good attack.

Level 2warf\Battle dwarf
Reason-Very good defense troops.Spell cast damage reduction is a very good abilirt in reserve,though happened to me very rare

Level 3:Beholder\Evil eye
Reason-Good health.good damage for level 3,but it isn't a very good range shooter.Supplied with many shots,in spite of the medusas few ones.

Level 4:Swordsman\Crusader
Reason-Can purchase them in week two,best melle unit for its level.Crusader hits twice.

Level 5:Minotaur\Minotaur king
Reason-Good melle units,good morale.Golden armor got to me!

Level 6:Black knights\Dread knights
Reason-Good defensive unit,as well as strike force.When attacking with dread knights double damage might come and it's a really good atribute.

Level 7:Behemoth\Ancient behemoth
Reason:Behemots can be recruted in day 3,have excellent attack..cheaper than naga queens.Ancient behemoth is the strongest level 7 unit,and not too expensive as well.

You'll all disagree...

I'll post 2 actually, since I can't choose on most levels...

Formation 1:

Level 1 - Skeleton Warriors - Necromancy!
Level 2 - Marksmen - Double Shot says it all.
Level 3 - Grand Elves - Alright, I'm a sucker for Double Shot...
Level 4 - Arch Magi - Spell cost down + Ranged.
Level 5 - Zealots - Ranged...
Level 6 - Dread Knights - Double Damage = Level 7 pwnage (Sometimes).
Level 7 - Titans - Greased Lightning! (Precision + Prayer = Ouch...)

Formation 2:

Level 1 - Master Gremlins - Numbers! + Ranged...
Level 2 - Marksmen stay put
Level 3 - Grand Elves just do it...
Level 4 - Orge Magi - Bloodlust is a nice add to an otherwise pummeling machine.
Level 5 - Power Lich - Death Cloud with high numbers does it.
Level 6 - Cyclops upgrade name? - Very usefull in a siege + Ranged...
Level 7 - BLACK DRAGONS! - Needs no explanation...

1. Imps - great fodder for demons
2. Magogs - can hit 7 units with one shot
3. Royal griffens - can hit 30 times in 1 round (beat that)
4. Arch Magis - shooters and make spells cost less which is very usefull if u plan on using high level spells from your mage guild
5. Mino kings - amazing damage, allways in a good mood
6. Cyclop kings - level 6 shooter, enough said
7. Arch devils - can beat almost all (maybe even all) lvl 7s in a 1 on 1 fight, no retaliation is awesom.

Without flux:

1. Centaurcaptains (Skells only beat them later in higher numbers)
2. Harpy Hags (You can kill so much with a handfull of these..)
3. DragonFly (13 speed, 20 hp and high defense makes it a very tough and usefull creature)
4. Vamplords (It's still amazing what u can kill with several of those creeps, u can even take a tope with only lords....beat that)
5. Mighty Gorgons (tough call between them and MinoKings, but their hitpoints and their speciality make up for that little lower damage ratio, 12-20 to 12-16)
6. Efreetsultans (the most feared guards and the only unit which can hurt nagaqueens on retail..)
7. Ancient Behemots (Not only because of their speciality, but they are sooo easy to get, requirements are very low and costs also)

With flux, i would replace the first 3 slots with upgraded flux units, all others stay.

Hi Angelito,
it seems that you are chosing your favourite creatures according to combat/tactical value + value/price + growing rate, but these are three different things for me
Also, I don't think that Ancient Behemoths are so easy to get, their value/price is average among the lev7 creatures and I have lost at least 2 games when I have upgraded them so early and runned out of money.
By the way, here is my top ten of best creatures by value/price (computed values are adjusted to match the AI value average, Conflux exluded):
1. Vampire Lord   2,56
2. Behemoth       2,07
3. Hydra          2,07
4. Mighty Gorgon  1,94
5. War Unicorn    1,93
6. Stone Golem    1,92
7. Dendroid Guard 1,91
8. Efreet Sultan  1,91
9. Black Dragon   1,90
10.Unicorn        1,88

(...Ancient Behemoth 1,60 )
