Phanteks recently came out with P400A and it looks pretty good.
Might want to seriously consider this over other options in this price range. Looks unbeatable price/noise/performance ratio.
Please note that P400A and P400 are different. The P400 is old and sucks.
PS. Yes that'a review for the more expensive version with 3 RGB fans but that really shouldn't be that much different to the cheaper one.

Only one shop sells it locally, and they seem dodgy. And I don't see how it would be an improvement over the silverstone redline to be honest.

There is a minimal difference in price, but the delivery costs make them more-or-less equal. Except the redline is in stock everywhere, and the Phanteks is, well, not.

All manufacturers tend to have their specific UIs so can't give specifics but here is what you need to do.
1. Connect your computer to your main router (usually through ethernet cable)
2. Sign in to the device(usually 192.168.0.1 address, check your manual for this and the userid/password)
3. Take a photo of the settings for routing(Bridged/Routing, DHCP/manual) and LAN(Adress, Submask)
4. Connect your computer to your wireless access point(usually through ethernet cable)
5. Sign in to the device(check your manual for this and the userid/password)
6. Configure the wireless(just as usual, name bandwidth, password etc.)
7A. Now if you are using a wireless access point, you should have a manual with it how to do this. -> check what it says for a network with your settings showing on the earlier pictures -> go to 11
7B. For using another router -> Continue forward to 8
8. Disable DHCP
9. Configure the LAN(same submask(and if necessary in your case, main modem as gateway))
10. Setup the LAN address of the access point to something not in use(refer to main router LAN/DHCP photos)
*IF DHCP -> outside of DHCP range and different IP than main router
*IF NOT DHCP -> check all devices on the network and set a different IP
11. SAVE SETTINGS
12. Reboot access point
13. Plug an ethnernet cable from a main router LAN port to an access point LAN port.
14. Test if it works, if not, go to 1 and check you did it right. Read the manual again, there's probably a special option you didn't check put in JUST for your specific model because they love to be like that.

Well, trying and failing to set up an access point. Which do you recommend, buying a dedicated one, or hiring a professional to convert the old router?

Checking the manual again for that pesky trigger that is hidden somewhere in there, probably something like changing GATEWAY MODE to ROUTER or something along those lines.
Also asking on a tech forum about your specific model, because there's probably someone who has done it before.

We built approximately half of it yesterday, it's really pretty so far. CPU+cooler, SSD, RAM, and an installed, but not prettied up PSU is the score.
Any reason why
1, the case came with 4-5 different kinds of screws,
and
2, we haven't found a set of 9 matching screws for the motherboard?

1. Harddrives, fans, drive cages, side panels, expansion cards, motherboard, dvd drives, etc.
2. Somebody is pinching pennies or just forgot to pack them.

Thank you! Would it be advisable to substitute the missing probably motherboard screw with a different supplied one that also fits the standoff? Or should we just make do with 8 screws?

One missing is not too much of an issue, just make sure it's missing from the right bottom corner, which doesn't take much weight from things but it would of course be better to have another there. You don't wnat to use a badly fitting screw because you could strip the threads with a differently threaded one and possibly even crack the motherboard with a wrongly tapered one if you really tighten it down.
TLR If you are too lazy to walk to a store to get a screw, you can just leave the bottom right corner screw out. Don't use a different type screw.

You should have went on for an 8 cores or 12 cores(AMD Ryzen preferably).
You should have gotten an AMD board with a AM4 socket instead. TR4 socket is for the 16 and 32 cores processor dies.
Should have stuck with a very good 7200 RPM type of a Hard Disk drive that can have storage space all the way to 8 Terabytes in total capacity.
Other than that the rest of the specs. look quite acceptable but, for the fact that you used strickly on-line re-sellers for your selection of part was a very miserable choice to begin with. Always use a very specialized in electronics products selling types that uses a real physical stores and warehouses. Example: TigerDirect.com(.ca for me in Canada) or CanadaComputers.com in Canada. Best-Buy.com is a definite no-no for computer parts, since they can only sell you an extended guarantee for these new parts.
Suggestions: For the 5.1 surround sound system, go for the Logitech one. Same company and brand for the webcam and, for the keyboard+mouse combination package.
For the monitor, rather a Samsung or Acer 32" widescreen display that has about three(3) HDMI(1.0-1.1)ports for direct video and sound quality transfer rates. 1920 x 1080 HD native resolution is almost a true must-have for these days' types of ultra realistic graphics types of games.
Alright, that should cover it all about the PC. A reliable HP Inkjet printer is my advice for printing all those on-line receipts that you will need to print out.
BTW: Try to get yourself a Fiber Optic cable connection for a standard internet connection that will thrusts you in the new on-line world of at least 10.5 Mb/s downloads per download sites.
