It's simple Pheonix, you do demon farming where losses ARE expect or battles that requires or can use fodder.
For example, a Naga Bank is a good demon farming place. Because you can use the intended demon-farm stack as bait and if it does not die, leave one naga stack alive and let them kill them since their attacks can't be retaliated.

I think hit and run is best inferno tactic.

Id say that is best for Conflux or Dungeon. Besides, you can still do H&R and demon farm at the same time.

Please Anil read the following text carefully:
1. Inferno is a very hard town to play, even the best of the best can't fully operate it at all times. It takes a lot of practise, patience and understanding of not only the town itself, but the overall game as well.
2. Demon farming is not something special. An example: You buy 7x Hell Hounds. Go into a difficult battle, send the dogs in and use them as bait/soak retaliation and raise them when there is only 1 enemy unit left. Voila! Your 7x Hell Hounds have become 5x Demons.
The more demons you acquire, the more safe the stack will be as the AI avoids stronger stacks in favour of weaker ones.
There is nothing more to this or some sort of secret of demon farming. You buy the required troops to raise as much HP as possible, send them into the fray while you kill everything but 1 unit, raise them and then finish off the last unit.
3. Start learning how online gaming works first and do this with the town you like the most, which from what I understand is Castle/Dungeon.
Good luck!

Just curious but why do you say Inferno is one of the hardest towns to play, if it is'nt for demon farming?
I think Inferno is very easy to play, a lot easier than my favorite faction Fortress, because they have speed and 2 units without reatalition and town is very easy to build up also on impossible. Also when you play without town portal Castle Gate can be handy if you can find a second Inferno.
If you don't use chains and town portal I guess demon farming will become very difficult though...

Fortress gameplay is simple as stick
2nd day go wyvern
build all ultra cheap stuff even on impossible
choose tazar
creep fast and strong thanks to hydras and gain considerable advantage in level and artifacts. Relatively safe Utopia creep with hydras and shield

There are many things that makes the Inferno hard, but I will list the ones I can think of atm.
1. The Inferno starting army can be surprisingly tough, but since demon farming is your goal, losing as much as 10 imps can be a bummer, let alone more troops. The focus on not losing units can almost drive you mad.
2. Very vulnerable to double morale.
3. Efreets and Devils are quick and hard hitting, but also pretty soft.
4. Only one shooter, which often comes in low numbers, means you cannot soften enemies up.
5. You cannot demon farm until M1W2D2 - this means the coming days will be even more stressful compared to other towns, for you must worry about sacrificing demons on top of clearing the map.
6. Because of demon farming, you got practically no fodder units. You also got no good kite unit apart from your Efreets, which can be risky to use for kiting.
7. While it is a less concern for a used player, the amounts of gold needed can make you sweat even more than with the Tower.
8. Lava terrain is not exactly the most resourceful place.
9. Pretty much all dwells on the map are painful to fight because of the high speed of Inferno troops.
10. Luck decides a lot. For example your demon stack can change greatly depending on when you can flag your secondary towns and also depending on what towns they are. If both are Castle/Rampart you get a lot of demons, if Necropolis or Conflux you get none.
There are many more factors, but these are the ones concerning the map.
As for Fortress, it is much more simple. Like Revolution said, get Wyverns on D1/D2 and keep clearing until you get Hydras. It is easy to take Fly-Cons during the first week and the Wyvern power stack is handy. Although I prefer to go with a Barbarian rather than Tazar, but that's up to you as a player to decide.

I've been trying some demon farming from time to time (cause I got free Pit Fiends with Diplomacy) and I think is worth mention you want to farm with weak heroes. Once I got a Vidomina with Diplomacy, Cloack and Pit Fiends (for tradig purposes only, sell or sacrifize the liches and demons to get better heroes or more resources). After a while it was almost impossible, I would have to go with a new stack of level 1 to fight a stack of level 4 or 5, cause everything of closer levels would survive the fight with at least a few units. I remember to have imps jumping around in front of marksmen (more then them), survive till the marksmen exaust their ammo and then kill them with the retalions, 5 survived...

Hehe well Sal, hopefully a miracle will happen and they will pick it up, or I will be so exhausted that I can't tell the difference between getting a red star(s) or yellow ones from exasperation.
I guess this will be me when Anil is to take the H3 online license. xD

Inferno isn't one of the hardest town, Inferno is hardest town to play because Inferno has a lot of disadvantage;
Lack Hero Department
Lack Shooters
Lack Tanky unit.
Your units are expensive fragile and weak only 2 acceptable unit (Cerberus and Efreet Sultan).
Castle gate is only useful on specific maps.

Maybe I'm just good with Inferno and I don't even demon farm. Also things seems to go very easy when playing (a nerfed) Conflux or Cove. Strongholds units gets destroyed due to lack of speed, defense and spells and Fortress is also harder to play. I know you can always choose Crag Hack and Tazar, but that gets boring after a while, so I always pick random starting hero to make things different.

3.5? You mean HotA?
Inferno did get buffed, but not so much. You can control Magogs fireball and Arch Devils gives -2 Luck and negative luck was introduced.

Nono, officially is same, just pointing out that within very few lines of codes, you can modify them to match your expectations. In 3.5 there is no such thing as "weak, strong", the things are what you want them to be.
3.5 is wog.

Some thoughts about Inferno.
Good things:
- Castle Gate can be one of the most powerful special buildings. In large maps with several Infernos Castle Gates can change a game. In combination with the Order of Fire you can improve starting heroes a lot.
- Archdevils in combination with blinding (okay, it is unfair...)
- high chance to get mighty combat spells (fire): sacrifice, berserk, blind), armageddon)
- Pit Lords and Demons (farming) and Cerberi grant a strong infantry; Imps are perfect sacrifices for farming
Bad things:
- Brimstone Clouds
- Ammo Cart (Ballista would be much better)
- Grail Building (it needles in huge maps, when Imps stand everywhere)
- no one of the top-heroes
- heroes can't sacrifice artefacts
I always try to get Fire-Magic here, even I avoid to use bererk because it is unfair against AI. Tactics and Offense I like here too.
