The Air Elemental seemd to have a work in progress model in the files. Does that mean that all the elementals might get their own unique models instead of the ones from H6?

Nope, don't count for it  Water elemental is replaced because it was the same as the Sanctuary Mizu-Kami and it seems there won't be any dark and light elemental in HVII also

Elementals are already in the Beta, at least fire and air. You can see fire elementals at around 4 minutes right here in one of my uploaded videos.
I saw air elementals on the adventure map somewhere and I'm sure they looked different.
