Also, you don't have to say exactly 3 creatures (you could say your top 10, or just your favorite one), but that's the standard. Here is the list by me:
1: Vampire Lord (I like them because of their ability)
2: Crystal Dragon (I get used to them with the map Brave New World, there's a Crystal Cavern in the beginning on it... and I like their looks)
3: Mighty Gorgon (when I was a kid, they were my favorite unit - because of their ability; I still have sympathy for them)

Three? Dragons, millions of them!
But seriously, rocs rock IMHO. You can get them quickly, so they'll be fine to block shooters.

And... I just love halberdiers. I've played many sieges where the AI had a seemingly better army, but those guys, when in big numbers, could massacre every flyer that dared enter my castle and also endure strong attacks with minimal losses. I have won many such battles thanks to them.

I think I've already posted on this thread some time ago, but... I'll repeat just cause I love THAT particular game (H3 that is) too much, and because I still play it today.
So, here are my favorite H3 creatures (in no particular order):
- naga queen
- dendroid
- archdevils
- efreeti sultan
- grand elf
- psychic elemental
- mighty gorgon
- chaos hydra
- wyvern monarch to a degree
- ancient behemoth
- dread knight
And that's about it! Not a fan of necros (DK is an exception), castle, and dungeon, so that's why I haven't picked any creatures from there. On the other hand, I absolutely LOVE rampart and fortress (my all time fav factions of all Heroes series), with a crush on naga queens, psychic elementals, dread knights, and archdevils.

2. Wolf Raider
3. Ogre Mage
4. Storm Elemental
5. Dendroid Soldier
6. Greater Basilisk
7. Pit Lord
8. Efreet Sultan
9. Power Lich

I like Beholders and Evil Eyes better than I like other shooters because they have no melee penalthy and they have way more health than, Grand Elves for example. 15 vs 22, and if you play with Ajit, the master of Evil Eyes their attack and defense increases further.
One can argue that Grand Elves have twice the amount of damage with their double shot, but when the AI see a grand elf, they are toast immediately, the first thing they do is to shut that archer down by killing it, blocking it or blinding it.
When the AI see evil eyes (Maybe a whole lot of Evil Eyes) they don't just attack it right away, the AI actually fears the Evil Eye because they are very strong melee attackers.
That is why I like Evil Eyes, because the AI respects it, and for good reasons, it's not a unit to mess around with. Even the Titan respects it. If you combine the Evil Eye and Medusa Queens, you have the perfect couple of shooters, in addition the Medusa Queen can stone gaze the enemy.
Both the Evil Eye and Medusa Queens are shooters and both of them have no melee penalthy, which is as perfect as it gets, on top of that if you have the Medusa Queen right beside the Evil Eye, she can stone gaze any approaching enemy to remove the threat from the Evil Eye.
Black Dragons are fast creatures, not the fastest but quite often the Black Dragon gets the first draw in a battle, and when that happens, you can use that turn to mass slow the enemy, and when done the Evil Eyes and Medusa Queens will have the first shots. Perfect combination and use with Black Dragons.
And don't forget that Black Dragons counts as two units, its breath attack will quite often kill two units in a single blow. The enemy's archers are very often right above the ammo cart, you can send the dragon to attack the ammo cart (diagonally) and it will kill their archer too without the retaliatory attack and the Dragon is undamaged, after that attack, your Evil Eyes will have its turn.
All in all, Dungeon creatures are my favorites because it has such powerful units, Medusa Queens and Manticores can both stun enemies and it quite often works too, it's not a rare thing to happen. When stunned, it lasts for 3 turns, just like a blind magic attack, on top of that their retaliation is reduced afterwards.
I like to have Evil Eyes piled up in one huge stack, because when they are great in numbers, the enemy will rarely attack it first, because their melee retaliation is devastating.
I also like the Troglodyte, it is a highly underestimated creature, but it can kill off the mightiest of creatures on the battlefield, even the Titan. I've lost count how many times I have killed off hordes of Gold Dragons with my Troglodytes. These level 1 creatures are just amazing, they are immune to blinding too, so they are pretty much always mobile and the AI will always kill it first, it doesn't matter what you have on the battlefield, it will aim to kill your Troglodyte first, anything else is second priority so when you have them on the battlefield, you know that your archers are safe in the first coming turns.
The good part of Dungeon is that it has two archer type of units, two stunning type of units, A dragon that can attack two units in a single blow, a Minotaur King that will never freeze in battle, and a level 1 unit which is always mobile. Dungeon is the best in the game if you ask me.

I must agree that evil eyes are sturdy, but other than that, meh! Never liked dungeon. I'll take my tazar with fortress creatures any time of the day over dungeon

As a Dungeon player my worst nightmare with fortress is the Serpent Fly, that speed is hard to deal with and the thing that it does to my creatures (Weakness if I recall correctly)
But I don't consider the Serpent Fly the worst nightmare, in situations the Mighty Gorgon is a nightmare, one time the death stare killed 70 of my Black Dragons, it's just insane how many Dragons that fell to that stare. After that event (Which was the biggest loss of Black Dragons I've ever had to the Mighty Gorgon) I've always aimed to try to kill that bull first in every fight.
Other than that, the next nightmare is to have that chaos hydra in the midst of my units (By teleporting).
There are some units which are very hard to deal with, Serpent Flies, Mighty Gorgons, Archangels, Archdevils and Sultan Efreet are just a few of them that needs to be dealt with quickly and preferably by archers.

As far as I know death stare is probabilistic but the numbers of kills it does is not, it is always 1 creature for x (I think is 10) Mighty Gorgons. So, how did it come that AI had 700 Mighty Gorgons in one stack? To me that only happens in custom maps.

That was on a custom map that I've made, it's basically me (Dungeon) vs 7 computers who have an alliance against me. They all start with 3 towns and I start with 1 town and a bunch of monsters which block my town that I have to fight before I get out of there, they start with no monsters.
The alliance they have make them able to build enormous armies, it was an old battle, I think that hero had more like 1,200 Mighty Gorgons, some of which were killed without the death stare, and the Dragon went in after the archers and then the death stare loss of 70 Dragons. It might have been 74, I don't recall exactly.
I changed that map later to put taxes on the computers because they had way too much income, because they share resources among each other, that was one difficult map to play, but I've improved it later.
Here is the minimap of it after I changed the computers to have only one town like myself (Dungeon is lower left corner)
(Top right, Tower, Below that, Rampart, Below that, Fortress, Upper left corner, Inferno, Below Necropolis, to the right of Necro is Stronghold and the green above my own is Castle)
I found that it is more fun to play with only one town per player, they still have a few dwellings beside the towns.

As a heroes newbie, I obviously prefer op-ed units (dread knights, mighty moos, etc.) and those gorgons are just insane, especially on tazar. Hydras? Yeah, they wreck havoc, too when played right (aka NOT by me LOL). As for the flies.... not a big fan of. Basilisks seem more dangerous to me. Heck, even the wyvern are more dangerous, especially on tazar, considering that the wyvern falls down pretty quickly normally
